Customer Rating: Summary: Good but... Comment: This is a good book from Rachael Ray. It has good recipes but I expected a lot more pictures.
Customer Rating: Summary: When you can't decide what to fix for dinner... Comment: this book is awesome. Although I don't care for Rachel Ray in person (something about her voice and the whole EVOO thing) she is a great cook. This book has so many ideas for so many types of settings; from cook-and-go to formal sit-down dinners. There is something for everyone. No frills, just good solid recipes and lots of them.
Customer Rating: Summary: 365 no repeats rachel ray Comment: Reveiced in good condition and it is a great book. Already went thru and marked the must makes.
Customer Rating: Summary: Excellent weeknight dinners!! My new favorite cookbook. Comment: Having watched Rachel Ray's 30-Minute Meals, but having used none of her cookbooks, I wanted to find her best and most comprehensive cookbook....and this must be it! My husband and I are so pleased with the meals that we've tried. He used to make gentle fun of her...and now he says, "I trust Rachel Ray...these are excellent recipes."
Our favorite recipes include:
-Mediterranean Chicken with Saffron Couscous (amazing! our new chicken favorite)
-Greek Style Garlic Shrimp and Orzo
-Smoky Turkey Shepherd's Pie
-Pasta with Roasted Eggplant Sauce
-Pumpkin Pasta with Sausage and Wild Mushrooms
-Turkey, Tomatillo, and Bean Burritos
There is some repetition, with variations of master recipes, but some of the variations were the ones I wanted to try (e.g. Greek Style Garlic Shrimp with Orzo versus the master recipe, which was a straight-forward Italian pasta with Shrimp).
Most of the recipes take me about 45 minutes to make, since I don't have everything out in perfect order and since I prefer to let ingredients simmer and mingle a bit more, but I don't mind. I'd rather enjoy both the process of cooking and the pleasure of eating rather than rushing through it.
In a word, the recipes are "Yum!" I got this on sale, for around $15, and it is definitely the best money I've ever spent on a cookbook. There aren't a lot of glossy photos, and it's not fancy, but the quality and sheer quantity of recipes to make any and every day are far more impressive than any other cookbook I own. Bravo!
Customer Rating: Summary: Most-used recipe book on my shelf Comment: My copy of this book is a disaster. It's crinkled, dog-eared, and covered with spills. It really doesn't fit in with any of the other beautiful recipe books I have, and gets stashed away in a cupboard instead of put on the bookshelf since it looks so horrible.
Fortunately, I don't need to pull it out very much these days... I now have most of my favourite recipes memorized.
I will probably never make all of the recipes in this book, but as you would be able to tell by looking at my copy, it's the most-used recipe book I own. Not only are there a LOT of recipes in the book, many of them use common ingredients. I don't have long, tedious grocery lists - I keep stocked up on the staples, and go to the store every week or two for my fresh ingredients - thyme, parsley and lemons are very popular in this book, and I always end up going through what I buy with no waste. This makes me VERY happy by saving me time AND money.
All the recipes I've tried can certainly be made in 30 minutes, though maybe not on the first try. But I find that once I've made a recipe once or twice, I'm familiar enough with how long everything will take me that I can prep the first ingredients and go on to prep the rest of the ingredients while the first ingredients are cooking. Some recipes, though, I find I like better if I let everything simmer longer than the recipe calls for (Like the Big, Thick, Hearty Thighs - southwestern style recipe... mmmm!)
Another big plus for this book is that she encourages the reader to "eyeball" things - rarely are exact measurements important. Some recipes even have a "master" recipe and one more more variations that change it up a little or a lot. I find this gives me the courage to alter the recipes to suit my tastes and come up with my own variations. I have always been a very "by the book" cook, and this is the first recipe collection that has given me the confidence to start making up my very own recipes with what I have on hand.
Of course, since none of the above would matter if this wasn't true: all of the recipes I've made have turned out delicously!
